Rush Hour

Fast service is pattern recognition plus disciplined communication.

The Rush Hour simulation trains menu awareness under time pressure. Real service adds queue management, confirmation, sequencing and recovery from mistakes.

15-second recommendation framework

Coffee or non-coffee?

Eliminate half the menu immediately.

Hot or iced?

Apply service constraint before flavor preference.

Strong or gentle?

Separate espresso-forward from milk/flavor-forward options.

Creamy or refreshing?

Use texture/freshness as a major branch.

Signature flavor?

Caramel, palm sugar, floral, hazelnut, chocolate, lemon, berry, etc.

Service recovery

Repeat the request
“Strong, iced, oat milk, half sweet—correct?”
Own the correction
Do not argue with the guest if the drink misses the confirmed target.
Learn from the miss
Tag whether the failure came from recommendation, recipe execution or handoff.
Simulation connection: Brew Challenge separates recipe accuracy, technique and customer fit. A technically perfect drink can still be wrong if it ignores the ticket.
During a rush, what should you do first when a guest says “No coffee, iced, refreshing”?
Recommend the bestseller.
Immediately filter to iced non-coffee refreshers.
Ask whether they want a double shot.
